Drew has asked some help from the show. He and Libby never cook and they rely on her parents too much to cook for them! Below are some delicious recipes we've come up with for them.
Chicken Pot Pie (from Jodi)
1 can cream of chicken soup
1 can cream of mushroom soup (optional)
1 package frozen vegetables – thawed – about 2 cups
1 cup cubed, sliced, shredded or chunks cooked chicken
½ cup milk
1 cup Baking mix (Bisquick for example)
1 egg
Salt and pepper to taste
Preheat oven to 400. In a casserole dish, mix soup, veggies, and cooked chicken.
In a separate bowl, mix milk, egg and baking mix. Pour mixture over chicken mixture.
Bake 30 minutes or until golden on top.
Easy Fajitas (from Sam)
2 chicken breasts
Fajita seasoning (your favorite, to taste)
Veggies sliced: onions, bell peppers, mushrooms, etc.
Shredded cheddar or Mexican blend cheese
Tortillas
Slice chicken in advance and add to a zipper seal bag. Shake fajita seasoning on breast strips to taste. Place in refrigerator for a few hours or overnight. When ready to cook, heat a cast iron skillet on medium and coat with cooking spray. Cook chicken until done. In a separate spray coated skillet cook vegetables (which you can also coat with fajita seasoning) until done. When meat and vegetables are done cooking, place a tortilla in large skillet on medium heat. Add plenty of cheese to one half of the tortilla and then add meat and vegetables and flip other half of tortilla over the meat and cheese. Allow a minute or two to melt cheese and flip tortilla to cook on other side. When done, place on plate and slice with pizza cutter.
Jodi's Awesome Red Sauce!
1 small onion (diced)
TBL minced garlic
TBL olive oil
2 bay leaves
2 small cans tomato paste
3 small cans tomato sauce
2 cans stewed tomatoes
3 TBL sugar
2 pounds ground beef (optional)
In a large pot simmer the diced onion, garlic, olive oil. In a bowl mix tomato paste with sugar and stir. Add the tomato paste mixture to the pot. Then add tomato sauce and stewed tomatoes into the pot – mix. Add two bay leaves, cover and simmer 3 to 4 hours. If you want you can add ground brown meat after the sauce has been cooked.
