Sam’s Pizza Dough
- 500g 00 pizza flour
- 300g water
- 5g yeast
- 6g salt
- 14g olive oil – I used a Tuscan Herb flavored oil for more flavor
Using a stand mixer add the 3 dry ingredients and whisk just to mix them together. Add water and olive oil and mix with the bread hook until dough is mixed well and pulls away from the side of the bowl…this should take just a few minutes. If you don’t have a stand mixer you can do this all by hand 😊
Remove the dough ball and place it in a lightly oiled bowl. Cover and let rest for 2-3 hours. After it rises, separate into 2 dough balls and cover both and allow to rest, covered, for another 2 hours.
After the final rise you can make a pizza and/or seal the dough in a container/ziplock in the refrigerator for up to 2 days. (If you are using a dough from the fridge, remove it from its container and let it rise, covered, until room temperature before cooking).
Your oven needs to be very hot – 550 degrees is a good oven temperature (higher if you have a home pizza oven). It only takes 7-8 minutes to cook. I recommend a baking steel to make the crust crispier.
Sam’s Pizza Dough #2
This recipe makes (3) 12″ pizzas!
- 0.3g yeast
- 325g water
- 350g bread flour
- 159 g AP flour
- 12.5g salt
- 10g sugar
- 10g olive oil
Put the yeast in the water in your mixing bowl. Set aside about 10-15 minutes for yeast to bloom.
Add both flours, salt, sugar and olive oil to a bowl.
When the yeast is ready, add the dry ingredients to the water and yeast mixture. Using a stand mixer, mix on low for a couple minutes until it’s all kinda mixed together. Turn mixer up 1 speed and let it run about 5 minutes or until your dough ball has formed. Remove the dough and make it into a ball. Place it in a greased container with a lid.
After 30 minutes take the dough out and stretch and overlap each of the 4 sides. Place it back into the lidded container. Do this twice more, each time after 30 minutes. Place it back in the lidded container overnight.
After 24 hrs, your dough is ready to make pizza. This recipe will make enough dough for 3 12” pizzas. If you don’t use the dough after 24 hours you can refrigerate it for another 24 hrs at the most.
(Before you use it from the fridge, set it out for a few hours to come up to room temp.)
Homemade White Pizza Sauce
- 8 oz ball fresh mozzarella
- 1/3 cup of ricotta cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon dried oregano
- 1/8 teaspoon dried thyme
- 1/3 cup freshly grated pecorino romano cheese
In a small bowl, mix together ricotta, salt, pepper, and herbs. Spread mixture into a thin layer across the fresh pizza dough. Layer with thin slices of the fresh mozzarella, and half the pecorino cheese. Bake pizza according to your usual times and temps.
**White pizza is then topped with any of these suggestions: arugula greens, fresh spinach, roasted garlic, balsamic drizzle.
Jodi’s Pizza Dip
- 1 (8 oz) package cream cheese, softened
- 2 teaspoons Italian spices
- 1 cup grated parmesan cheese
- 1 cup grated mozzarella cheese
- 1 cup pizza sauce
Mix cream cheese with Italian seasonings. Spread cream cheese mixture on a pie plate or shallow dinner plate. Sprinkle 1/2 cup of both the parmesan cheese and the mozzarella cheese on top of the cream cheese layer. Top with the pizza sauce. Sprinkle the remaining cheeses on top of the pizza sauce. Cover with plastic wrap. Microwave for 5 minutes. (It will be hot!) Serve it with crusty French bread or crackers.
Tip: You can double this recipe and put it in a glass casserole dish for parties.
Winter White Pizza Dip
- 1 cup ricotta
- ½ cup shredded mozzarella
- 1 tbsp olive oil
- 1 tsp oregano
- 1 garlic clove, minced
- ½ cup chopped spinach
Mix all ingredients in an oven dish. Bake at 375°F for 15 minutes. Serve with toasted bread or pita chips.
Taco Pizza
Makes 12 main dish servings.
- 1 lb ground beef
- 1 envelope taco seasoning mix
- 2 (8 oz) cans crescent rolls
- 1 (16 oz) can refried beans
- 2-3 cups shredded cheddar cheese or Mexican blend
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
Heat oven to 375 degrees. Brown ground beef and drain. Add taco seasoning to the ground beef according to the package directions. Unroll crescent rolls into rectangles. Place in ungreased 11 1/2 inch x 16 1/2 inch jelly roll pan or cookie sheet. Press dough over the bottom and 1/2 inch up sides to form crust. Bake at 375 oven for 11 to 13 minutes or just until golden brown. Microwave beans in a microwave safe bowl for 1 minute. Carefully spread beans over warm crust creating a thin layer. Top with cooked beef mixture, sprinkle with cheese followed by tomatoes, black olives and green onion. Return to oven for 3-6 more minutes until cheese is melted. Serve immediately.
Buffalo Chicken Pizza
- 1 large pizza crust (there are 2 pizza crust recipes we’ve got posted here!)
- 1/4 to 1/2 cup thick ranch dressing
- 1 (8 oz) chicken breast, cooked, sliced thinly
- 1 cup buffalo wing sauce
- 2 cups mozzarella cheese, shredded
- red onions, sauteed (optional)
- top with sliced green onions (optional)
- 3 or 4 slices of bacon, fried and chopped
Make (or buy) pizza crust. Sauté red onion slices in olive oil just until they’re not crispy. Fry bacon slices, cool then chop. In a small bowl, combine hot sauce with chicken pieces. Spoon chicken evenly over crust and drizzle with remaining sauce as desired. Sprinkle with sauteed red onions, shredded cheese and chopped bacon over the top. Bake pizza at 500 degrees for about 15 minutes or until cheese is browned. Can top with sliced green onions if desired.
BBQ Chicken Pizza
Use any crust you like!
- 1 cup cooked chicken – shredded, chopped or rotisserie
- 1 cup of bbq sauce
- 1 cup of cheddar cheese
- ½ cup sliced red onion
- ½ cup of drained yellow corn (optional)
- ½ cup of bacon bits or real bacon crumbles
Prepare crust and heat oven according to crust directions. Spread bbq sauce on the crust. Toss the chicken with some sauce also. Next, sprinkle all the rest of the toppings to your liking. We usually top with a last little bit cheese. Bake according to directions. SO good!!
