Roasted Spaghetti Squash – Jodi’s Way.
Slice in half, scrape out seeds.Salt & pepper lightly, drizzle a little olive oil on the inside. Turn them over, round side up! Poke a few holes on the outside skin with a fork. Roast in oven at 400 for about 40 minutes.When they come out, flip ’em over and scrape & fluff the entire inside with a fork for all the “spaghetti” goodness. Great with a little butter.
