A Recipe from Producer Chad’s Mom:
2 cups chopped mixed dried fruits (apples, apricots, dates, peaches, pears, pineapple, prunes)
2 cups chopped nuts (pecans, walnuts)
2 cups all purpose flour
2 Tablespoons wheat germ and/or quick oatmeal
1 teaspoon baking powder
sprinkle salt
8 oz package cream cheese
2 Tablespoons butter
1/3 cup sour cream
1/3 cup plain yogurt
1/3 cup concentrated apple juice
1/3 cup concentrated pineapple/orange juice
2 eggs beaten
2 Tablespoons milk, add more if batter is too thick
Combine dry ingredients together, combine wet ingredients together, mix together.
Scoop rounded soup-spoon size on parchment paper lined cookie sheets. Bake 10 minutes in
350 degree oven. Cool on rack. Makes about 4 dozen.
